Fitness Flash: Cauliflower Millet Mash Recipe

Eating healthy comes naturally for some but for most people it can be somewhat of a challenge. I would suggest making small changes in your everyday diet as a way to slowly transition into a healthier well-being.  Part of this journey is discovering new recipes and ways to prepare your meals.  To get you stepping in the right direction take a look at the Cauliflower Millet Mash recipe below from Tricia Williams, the founder of Food Matters NYC.  Through her company Williams wanted to share her passion for fresh, whole, locally grown, organic, sustainable and delicious food.  As an expert in the kitchen she leads her clients to better food choices and ultimately healthier lifestyles.

Cauliflower Millet Mash 
Serves 2

¾ cup             Millet
2 ½ cups        Water or Vegetable Stock
1 piece           Kombu
½ head          Cauliflower
¼ tsp             Lemon Zest
                     Sea Salt and Pepper to taste

      Chop cauliflower into large florets. Set aside.

Rinse millet. Place millet, water and kombu in a large saucepan over medium heat.

Bring to a boil. Add cauliflower, being sure to submerge the florets under the water. Cover with a lid, reduce heat and let simmer for 25 minutes or until the millet is cooked.

Remove from heat. Discard kombu.

Let mixture cool slightly.  Place millet-cauliflower mixture in a food processor. Add lemon zest, salt and pepper. Carefully puree mixture.

Note: Can be prepared ahead and reheated.
